Oleoresin is a viscous liquid or semi-solid material derived by extraction from finely-ground powder, which contains the fragrance and flavour of its source. Oleoresin represents the complete flavour and non-volatile resinous fraction present in its source. The resinous fraction comprises of heat components, fixative natural antioxidants, and pigments.
